Gluten-Free Parmesan Crackers

Preparation

STEP 1

Preheat oven to 400 degrees F.

STEP 2

Mix flour, salt and parmesan cheese together in a medium bowl.

STEP 3

Then add the oil and add water one tablespoon at a time while mixing until the dough just comes together. The dough should be a little crumbly and not sticky at all. If it’s sticky add a little more flour.

STEP 4

Form the dough into a large ball and place between two layers of parchment paper on a cooking sheet. Roll out to a very thin 1/8 inch rectangle. Remove the top layer of parchment paper and push any cracks back together.

STEP 5

Use a pizza cutter or knife to score the dough into 1-2 inch squares.

STEP 6

Bake 15-20 minutes until golden brown. If the edges start to brown first, remove those to cool, carefully break the remaining pieces into squares and keeping baking until golden. Cool, break remaining pieces into squares and eat. Can store leftovers in an airtight container for 3-5 days.

  • 1 cup Pereg Natural Rice Flour purchase
  • ½ teaspoon salt
  • 2 Tablespoons grated parmesan cheese
  • 2 teaspoons extra virgin olive oil
  • ¼ - ½ cup room temperature water
